This classy yet sassy cocktail was crafted by one of my dear friends and foodie partner @djrashida. It was fun going back and forth on what this cocktail would be as it was set to be our feature cocktail at one of our themed dinner parties here in Los Angeles. The Hong Kong First Class High Flyer is a taste of the traditional cocktail with a splash of champagne on top to upgrade this beauty from coach to first class. And might I add it was perfectly paired with our feature film Hung King Express and classic Chinese cuisine. So next time you have the desire to travel in style but just don’t have the funds try this on for size.

1½ Parts Vodka (for traditional recipe use Gin)
1 Part Lemon Juice
½ Part Lychee Liqueur
Champagne (any brut will do)
Fill a rocks glass with crushed ice. Add lemon juice, lychee liqueur and vodka Top up with apple juice, fresh pressed and a splash of champagne. Fill with crushed ice. Garnish with apple juice.
