Fall is my favorite time of year. I love the smell, the changing leaves, and most of all the idea that I can eat for two months straight wearing my Mom jeans. I mean, I can’t be rude and turn down a delicious pumpkin infused (every) thing! This month I have decided on the do.it.yourself method and added homemade pumpkin spice syrup to the top of my list of must haves in the fridge. Whenever I need to whip up a fancy waffle, spice up a cocktail, or just want a pick me up in the form of a homemade Pumpkin Spiced Latte, this has been my go to girl! I consider her the favorite cousin of the classic simple syrup. She’s fun, spicy, sweet, and only comes to visit during the holidays. 1/3 cup pumpkin puree
3/4 cup water
1/2 cup white or brown sugar (or half of each)
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon cloves
1/4 teaspoon ginger
Combine all ingredients in a small sauce pan and bring to a boil, stirring often.
Reduce to a simmer, stirring over medium heat until syrup reaches desired consistency and starts to coat the spoon (about 10-15 minutes).
Store in an airtight container in the refrigerator.
